CAVA Founders Planning a New Steakhouse Concept in North Bethesda

The restaurant is expected to serve Mediterranean-inspired dishes

The founders of CAVA, the fast-casual restaurant chain, are bringing a new steakhouse concept called Bouboulina to North Bethesda, Maryland.

Ted Xenohristos, Dimitri Moshovitis, and Ike Grigoropoulos are behind the American steakhouse concept which is expected to open in the summer of 2024 in the Pike & Rose development at 11580 Old Georgetown Road. 

The new restaurant is named after the female naval commander in the Greek War of Independence. Bouboulina will be centered around an American grill inspired by Mediterranean cuisine. 

“We look at this as a passion project,” Xenohristos told the Washingtonian. “We love the full-service industry, we love the hospitality part of it.”

A final menu for Bouboulina hasn’t been revealed yet, but the restaurant is expected to serve fish, steak, wood-grilled vegetables, and side dishes from Greece, Turkey, and the Levant. 

“We thought about this as a more modern American-style steakhouse, still influenced by our Mediterranean flavors and heritage,” Xenohristos said.
